The excellent quality of our olive oil can be attributed, among other variables, to our strict adherence to the correct rules of production.

The olives are collected in baskets and are processed within the next 24 hours thereafter. The cold-pressing method consists of grinding and stirring the olives at a maximum temperature of 27 - 29 degrees and it may produce slightly less olive oil but it serves to better preserve the oil’s natural nutritional characteristics.
